7 EASY VEGETARIAN DINNER IDEAS
With Covid being around and many people being vegetarians, it may be a hard game to conquer when having to quarantine and not being able to go out to eat at your favorite vegetarian restaurant. There are many people that may be used to or have developed a regular routine of going out to eat or picking up a quick veggie meal outside of the home. Covid has made it hard to keep this routine up. Although you can order and have such dishes delivered, the delivery services can be quite pricey, especially since we are in a pandemic. To ease such hassles, there are a variety of meals that are easy and quick that can be for dinner. I will go through seven easy meals that you can cook in no time and are healthy:
VEGETARIAN CHILI WITH GRAINS AND BEANS
This type of meal is simple to make and you do not have to use many ingredients, unless you want to. Wheat berries are a key ingredient in this meal.
SHAVED BRUSSEL SPROUTS SALAD
This is also a quick meal and also light if you do not want anything heavy on you stomach. This meal can include Brussel sprouts, apple slices, hazelnuts, and stuffed shells along with any other things you may want to add.
TOMATO PIE
This may not be a meal that may be advertising to many, however, if you love tomatoes you would love this meal and it is filling as well! You can make homemade sauce and dough and whatever other veggies you may desire!
WILD RICE AND CIDAR CRANBERRY PILAF
This is a unique meal and if you can relate to rice and cranberry together, you will love this meal. To top such meal off, you can add a stick of cinnamon for extra taste.
ROASTED RED CABBAGE AND COLLARD GREEN SLAW
This would be one of my all time favorites and in my opinion, a great combination! This meal consists of cabbage, that is converted into slaw and a sweet and spicy sauce.
CREAMY POTATO SALAD
I also love potato salad and it can be made in different way. Although potato salad can be made in different ways, depending on one’s liking, this would be one of my favorite recipes when pertaining to potato salad in general. You can do whole eggs or crumble the eggs up, depending on your choice. To top off the flavor, Dijon mustard is added to give such dish a boost!
BULGUR AND CASHEW STUFFED EGGPLANT
This particular meal can be made with any toppings. The eggplant is cut in have and topped with one’s favorite toppings! This particular dish has cashew nuts along with corn, onions, spinach and sweet and spicy flavors anyone would love!
